Stroker Newbie Help...

I am planning on building a stroker for my 89' XJ, and would like some help with what parts I should use to fit my uses. It is my daily driver, and used in the city and offroading, very rarely on the highway. I am definately more interested in low end torque than high end HP, and would like to keep the Renix setup (for financial reasons as much as preference ;P)
I have never built a stroker before, but will definately look into the strokers group at Yahoo and ask many questions before I make any decisions. Also, any help in finding out who does good engine work at as low a cost as possible (without screwing everything up, that is) here in Denver, CO, that would help very much too.
Sorry if any of this has been asked before, I've been searching the threads for hours and had some of the many other questions I had answered ;).

Edit: Forgot to mention, I would like to keep this build under $2,000, far under if possible.
 
You can do a nice stroker for $2k. My local machine shop did the boring and decking on mine as well as the valve job and sleeves.

You could copy my stroker but use the Renix head instead of the HO unit:
