Apartment Brewing Hard Cider!!!

Just moved last batch (made in Nov?) into secondary, I know, I forgot! Starting next batch as well... Part of how I do it is the fact that I only make 1 gallon batches at a time, one of these days I'm going to get over to Midwest Supplies (20min from here) and buy equipment to do 2.5-5 gallon batches...

Last two batches I've used champaign yeast, this batch I'm using Nottingham ale yeast, we'll see how it goes...

Unfortunatly since I forgot about the last batch, I don't think it will be quite drinkable at WF this year... But there's always next year!

Don't forget Northern Brewer, it's actually closer... (don't ask me how I know...)

Yes, either or, I've only purchased from Midwest before so, from your experience, which would you recommend? I'm one that likes to wander a store and look at everything before I buy...

This packet of Nottingham Ale has enough yeast in it for like 4-6 batches at the rate I use it... Hopefully it makes some good Apfelwein...

Now for a different kind of brewing...

Making bread with a little bit of Nottingham Ale Yeast...
3.5 cups flour.
2 Teaspoons Salt
1 Tablespoon Sugar
~1 teaspoon Yeast
1 Tablespoon Honey
1.5 Cups Warm Water

Mix Dry Ingredients in Large Bowl (everything except Yeast).
Take 1.5 cups warm water and add honey, stir until honey is dissolved. Add yeast to rehydrate and wait 20-25 minutes for yeast to wake up and begin multiplying. Add liquid to dry mixture in bowl. Using a wooden spoon, or silicon spautula/spoon fold ingredients together, should look like a big sticky mess, leave it! Cover with plastic wrap and set for 12-18 hours, should have something that ends up looking like this:

Knead dough in bowl a few times (less than 6) and cover again, wait another 3-8 hours.

(Ran out of plastic wrap, had to tape up the holes I made on accident.

Take dough out of bowl and put on heavily floured surface. Shape into favorite shape and cover again for 30min - 2 hours.

The last 30min of it resting, place enamled cast-iron dutch oven in oven set to 425-450 degrees, heat for 30 minutes. Remove dutch oven from oven and open. Gently and carefully pick up dough-ball and place into dutch oven, CAREFULLY as oven is HOT!

Bake at 425-450 degrees for 30 minutes, remove dutch oven cover and bake another 15 minutes or the internal temp is around 205-210 degrees.

DONE [Pictures to come when it comes out of the oven!]

Midwest has a better shop, but it also shares space with the warehouse. The new NB counter on Lyndale at the Crosstown is a pretty good retail shop.

My real gripe with Midwest is that when I did buy a couple of kits a couple of years back, the grains were already crushed, and no way to find out when. NB's are never precrushed.

I've been in NB's warehouse in Roseville a couple of times, it's pretty big.

Damn... I'll be headed to La Crosse to pick up the trailer I'm borrowing for WF...

DAMN! just looked at a couple kits from Northern brewer. 12.00 dollars shipping!

the last time i bought something it was only like 8 bucks even after they got rid of the flat rate shipping, im gonna have to see what the local brew store has.

Kits, especially liquid malt extract kits, are pretty dense. I'm not surprised that shipping is going up.

MN Brewer's club meeting in April is being held in NB's warehouse.

Guests welcome, TTBOMK. I still need to re-up for this year.

so i was looking at a 3floyds gumball head clone, and they say to use Amarillo hops. northern brewer is out of stock on those. (funny cause every 3 floyds brew i have looked at the hops are hard to find) what do you guys think would be a good replacement for the Amarillo?

also gonna check the local brew shops for some before i order anything.

how did that zombie dust turn out?

Kegging it later today. Tasted great when I transferred to tertiary to clear the dry hops.

Also kegging the chocolate breakfast stout. We should try to brew next week...

Rumor has it that Northern Brewer has bought up Midwest.
