FYI for those of you thinking about corion. Make sure there is plenty of insulation between your dishwasher and counter top. Over time (about 3 yrs in our case ) the heat cycle will crack the counter top and DuPont will NOT honor their warranty......this will be an extra $300 for us to fix.

I have some old pallets i was gonna bring to burn.
maybe ill build a pintrest style pallet bar and we can burn it at the end of the night like they all should be.

I just bought some accessories for my weber kettle grill to use it as a smoker. I use a electric smoker now so hopefully I don't mess this up since the electric does all the work for you. I'm going to do a boston butt sunday since its probably the most forgiving cut of meat to smokers but I have a brisket wet aging in the fridge if all goes well

We smoked a boston butt last Friday....it was awesome...I am still eating on some of it. Going to use the rest to throw in some gumbo tonight I think.

Haven't seen the outside of the hotel yet. Hoping to get out this weekend and do some shopping for the family.

The added work of a manual smoker is not worth it in the end. I had one for one summer then tossed it. Yes the food does have a little more flavor but its just not worth it.
