Someone needs to give me lessons on a smoker.
Everyone seems to be getting them.

Each model is different and runs differently. The goal is even and low temperatures. I aim for 200F typically. A lot of the $200 models need modification to run right. You can easily end up with a 75+ degree temperature difference from one side to the other. Baffles (sheet metal cut to size/shape) helped me control it. Also, installing thermometers, one on each side, at the grate level (vs on the hood) is very helpful to give you better info temp. Good air flow into the coals helps and rearranging the coal bucket in the fire box is handy too. That cherry wood you have would be awesome for a lot of different types of meat. A good rub never hurts either.

What's better about central vac vs a regular vacuum cleaner? I never understood why people had them other than convenience? I know nothing about them.

My grandfather has one in his place. Personally I'm not a fan, but I guess some people find it more convenient...

I was just curious. One thing we dont have is a vacuum.

My parents have always used a water based traditional vacuum and I love it. Plus it has a setting that filters the air after you vacuum. Always smells clean and fresh. It was expensive but lasts forever.

From my experience better suction and clean, quiet other than the beater bar (if you use one) when operating and more convenient to carry up stairs and whatnot; plus adds to home value (if that matters to you).

Just like the vehicle brand thing, preference really.

I doubt I'll do much again until it warms up. Maybe I'll do a big batch to bring to NAC fest.

I'm at work right now and it is totally dead.
