THe NAC Lots-O-BFG KO2 Thread

Re: THe NAC Lots-O-Post Thread

Doubling the spice amount isn't out of the question. The given amounts of cumin and ground pepper barely make a dent in my 3-quart cooker. Real easy to overdo the cumin though.

With the quantity I listed it fills my 3-quart cooker about 75%, maybe a little more. I've just used two whole chopped jalapenos, I dunno what the measurement of that works out to be.

This batch was on low from about 9 PM to 7 AM, so 10 hours. The first one was on high for about half that. I'd figure around 6 hours on low or 4 hours on high at least. Really it's just to make sure the vegetables soften up...the ground beef is already cooked by the time you add it. I don't think it's possible to 'overcook' on low.
Alright. Easy enough.
So you are adding the beef and sausage just alone with the spices cooking them then adding in the veggies? About how long should that be? Bear with me this is my first ever attempt. I am usually not allowed in the kitchen as I add spices to everything but nobody else is home today. :looney:

Re: THe NAC Lots-O-Post Thread

anyone works for me, lol i got rotors from all years. i have a later on the pass side and a earlier on drivers and spare rotors for both years in the back of the jeep. so ill take anything.

The first batch I made was quite a disorganized effort as it seemed like everything happened and needed attention all at once. The one last night was far more leisurely.

Before starting with the meat, get all the vegetables taken care of. If you can see my (facebook-hosted) photo, the green pepper is chopped up in the bowl, the jalapenos are chopped up on a small plate, the onion is chopped and in the measuring cup (side note: a cup's worth of chopped onion is roughly half of a whole onion). In the slow cooker I've already got the two cans of diced tomatoes, the can of sauce, and the can of chiles poured in and stirred. No spices yet. You can start preheating it to help thin it out to make it easier to stir the meat in.

The ground beef & sausage get cooked first in a frying pan on the stove. Add the onions, garlic, and grill seasoning while it's cooking. Once the meat is mostly cooked add the chopped green pepper and stir it around for another minute or two. The meat will cook pretty quickly like this which is what got me the first time...it was ready before I had anything to add it to. I just use a fork to keep stirring everything around until it's all cooked evenly.

Before adding it to the pot, drain the liquid out of the frying pan. I usually use my carving knife as a sort of 'dam' while tilting the pan at an angle over the sink. If you don't drain it, the liquid in the pan will float to the top in your slow cooker and just be generally gross.

Dump the meat/peppers/onions into the slow cooker and stir everything up, and add the spices at this time too. Get everything all blended up well (it might look kinda chunky at this point, it'll thin out), put the lid on, and walk away for a few hours.

Excellent! That is the guide for idiots I needed, thanks for pointing out the little things like 1 cup ~= 1/2 onion.
Off to get some more chili powder and then onto the mess!

Re: THe NAC Lots-O-Post Thread

I could get the MJ sideways and spent about an hour blowing donuts in the parking lot :D

Talked to the cook at work just now, he says he marinates the chicken for the buffalo chicken pizza in the sauce for days. Guess that explains why it is so damn good.

Re: THe NAC Lots-O-Post Thread

plowing the dusting lol hopfully we get hit big sunday night into monday. that will be fun.

didnt get shit down here, a small powdering couldn't even get the jeep sideways

we got about 1.5" last night/this am around cumberland

we have a lot of commercial condo accounts who are very whiney when its even a little bit slippy out. so we just go turn their parking lots into gravel and put lots of calcuim on the walks.

Re: THe NAC Lots-O-Post Thread

I'm going to try Andy's advice and add a bar of dark chocolate too. How long are you slow cooking it for?

Hey gents...

Yep... I just got the instructions from my wife. If using a regular-sized crock pot, do a 1/2 cup to 1 cup of RED wine, and use 1/3 to 1/2 of a regular-sized Special Dark candy bar. It is the combo of the red wine AND dark chocolate that REALLY give the chili a great flavor. Put this in last though, just before the chili is ready to serve. Before you put it in, put some chili in a small bowl for a taste-testing comparo. Put the dark chocolate in, let it melt and stir it up and let it simmer for another 20 minutes.

Then do a side-by-side taste test.

A.

you know where "ken's ghetto garage" is these days right? up behind denny's?

basically just go to the denny's on lincoln street, but keep driving up the road (after turning left at the light by denny's) and when you see my big white jeep off to your right, grab it out of the back. It should be in the cargo area or possibly in the back seat, has a d30 stub shaft in it.

Re: THe NAC Lots-O-Post Thread

Everyone I work with went out to lunch and, once again, did not invite me. I don't know what they have against me.

Re: THe NAC Lots-O-Post Thread

Nobody likes you.

I rarely go out to lunch with anyone.
Yeah, but this is the group that I play cards with everyday. I don't particularly want to hang out with them outside of work, but it's the principle of the matter. :rattle:
