No, there aren't any tre's made with enough offset to clear that style of cover.
If you want to install Serious steering you'll need to order a Ridler Diff Cover off my site or use an OEM cover and a Diff Skid.

Is OTK required for a 6" lift? Can I switch it to OTK when I feel I have the skills to do it if I get UTK? UTK has to be better than stock, right?

I do recommend the OTK kit for anything above 5.5" due to the severe draglink angles.
Yes you can convert to OTK from UTK by putting the taperedinserts in from the top and ordering the replacement OTK TRE off my site.
And yes, the UTK kit is a far better steering kit than the OEM inverted Y steering.
