What have you cooked recently that was good?

My response to another thread made me think of this.

What have you cooked recently that came out pretty good. Kinda a recipe or grill sharing exercise. I Had some pork chop sandwiches tonight.

I let them soak in some terayaki sauce with some lemon pepper, seasoned salt, chili powder, and pepper, with a touch of Worcestershire sauce. Then grill them. Add some AuGratin potatoes and green beans with a Sunkist and that was a tasty meal. I use the Arnold sandwich thins for bread.

Only thing to be careful about is to not use much salt, especially if you are going to let them marinate for a while. I take these with me backpacking and 4wheeling every once in a while. Just add the seasonings and stick them in a ziplock. The longer they marinate it seems like the less salt you need.


So who else likes to grill or cook something. I know Jon throws out chili and burger recipes from time to time.
 
Try marinating shrimp overnight in some Parrot Bay rum with a squeeze or two of lemon, skewer, and grill. Nice (and usually follwed well with a mild to moderate cigar. You can add veggies if you like, or cube a marinated steak and alternate. Marinate the steak in beer and milder spices to complement the shrimp. Both go well if lightly sprinkled with garlic while cooking.)

If you've got a bunch of old cut meat to clear out of your freezer, make a stew. Use beer for the liquid stock. Saute the meat and dump it - juices and all - in the pot. Add spuds, carrots, whatever else you like.

I've thrown up chili, burgers, and a beans & rice munchie. If I come up with anything else, I'll throw it up in NT as well...
 
Not much lately... been too cold for grilling. Cannot wait to move away from here.
 
I've started using the slow cooker/crock pot much more as of late. There are some great recipes out there...just throw everything together in the morning, set it on low, dinner is ready when you get home.

Two of my favorites are as follows:


20 oz. Red-Skinned Potatoes, peeled and cubed
1 oz. Package of Dry Ranch Mix
1 Pound Boneless/Skinless Chicken Breasts, cubed
1 (10 oz.)Cream of Chicken Soup
1/4 Cup Sour Cream
1/4 Cup Finely Chopped Onion
Salt and Pepper to Taste

Spray Crockpot with non-stick cooking spray.
Mix all ingredients together and place into Crockpot.
Cook on low for 6-8 hours.

Serve over any pasta or rice.



The other recipe is a variation of the previous one:

Instead of chicken, get a nice round roast.
Instead of sour cream, use an 8oz. block of cream cheese.
For thicker gravy, add some heavy cream in the last half-hour of cooking.

Lately I haven't been cooking... Moved back into the parents house after I lost my job and had to lose the apt so I would avoid going deep into debt. Now I am employed again but I like living the cheap life and getting free rent :laugh3:. I tend to work later than the rents do and they take care of the cooking, and they are good at it, so I don't complain.

I was always a fan of the slow cooker. Didn't matter if I was making a stew, chili (made lots of chili), or even just one of those frozen store bought slow cooker bag things.

My personal favorite is just making chili and putting whatever seems good at the time in. Start off with the basics, ground beef (or if you can afford better meats... whatever meat you have :)), black/red beans, tomatoes, etc. Then just throw in whatever seems like it would go well. peppers, onions, spices, hot sauce/chili, sometimes some shredded bacon. Always came up with something different depending on how I was feeling at the time and it was never bad.
 
this is not much of recipe, but if you swing through walmart, they have pre-packaged slow cooker roast meals in the deli section that are pretty good.

I like stuff that I can either use the slow cooker on, or marinate all day then throw on the grill real quick when I get home. That way when I get home from a flight, I can eat real quick and head back to the sim.

Cream of mushroom soup, cream of chicken soup with a couple chicken breasts are great in the slow cooker.

A canned ham with a can of pineapple and some cherries or raisins is good after a day in the slow cooker.

That's why I started using the slow cooker a lot. Back in college I would end up heading to the labs at 8-10 AM, come back for lunch around 1, eat lunch and throw some stuff in the cooker by 2ish. Then be back in the labs until I went to eat the food at 7ish. Then back to the labs for 8-?? (whenever the work was done). Being able to throw something together during my lunch break and come back to something good for dinner was always a plus. I think the people in my apt ate better than anyone else on campus :laugh3: If we didn't slow cook we grilled... or if we were too poor that week to buy stuff for teh slow cooker or grill we ate ramen or mac and cheese. :thumbup:
 
Been making Chicago style Italian beef with lean Buffalo roasts. Absolutely awesome. My 18 year old son can't stay uot of it. Eats it for breakfast, lunch and dinner till it's gone. Dipped in the broth and smothered in italian pepper mix.
 
Blackened Salmon steaks, lighly brush with olive oil and then roll in pepper mixture. Drop into frying pan pre-heated to medium high for a good sear. 3-5 min per side depending on thickness.

Serve on a bed of jalepeno brown rice with lemon-peppered steamed broccoli on the side.
 
I throw together a pizza once in a while... been too lazy to make the dough recently though, and I refuse to use premade dough, so it hasn't happened. It's a vegetarian recipe and includes spinach and shredded carrot, but I un-vegetarian it by adding as many varieties of pepperoni and whatnot as I can, it's one of the spinach recipes my friends nearly refuse to try and then don't believe contain spinach.

Another one I do pretty well is baked fish with XXXX/cheese sauce.

Oh, and pancakes. Those are easy as hell though.

had chicken n dumplings & steak n dumplings & steak on the grill the other day.
all for the same meal.

the chicken dumplings was for the neighbor (he bought all the fixings) and the gf made the steak dumplings for me & i did the steak on the grill for us.

she tossed the chicken (whole one) in the crock pot to cook it. made up the dumplings after it was done. cooked the dumplings in the "gravy" from the chicken.
she made the steak dumplings out of the left-over roast we had. instead of the crock pot she just tossed it in a sauce pot to get the gravy goin & did the same for the dumplings.

for the steak on the grill i rubbed it with some course black pepper & garlic powder (no salts), after the kids got done burning their marsh-mellows on the fire (i let it die down a bit so as not to burn the steak), tossed it on . flipped it about a min n a half later, repeated then finished it off. total grilling time about 7 minutes all told.
i use wood to grill on. not charcoal (wood is free here lol)
 
I cooked some ramen noodles. mmm the chicken broth and noodley goodness.


Had Freedom Onion Soup with Freedom Dipped Roast Beef Sandwiches. Hmmm. Tasty.

I think I'll try that tomorrow, with a side of Freedom fries.
 
Just whipped up some brownies for to take to work, the people in the call center like them, will probably make some lemon bars tonight.
Beef stroganoff on wed, I use london broil, freeze it for 20 min so it gets hard, then cut it into small chunks, make cutting easier.
Wife is doing a pot roast in her new crock pot, we'll see how that turns out, I used to use the crock pot to do deer roasts.

I made blackened salmon last night too. I do 2 min a side in a cast iron skillet, then bake for 8 min at 400.

Details on jalapeno brown rice?
