Now when there is maybe only a 10 degree difference between morning drive and evening driving, there shouldn't be a 70 degree difference in coolant temps.

No stopping and about 30 min long driving at 80mph. That should be more than enough airflow aver the radiator to keep it cool without fans
There are plenty of stories of first-hand accounts on the internet of overheating problems with no t-stat. It is the internet, so its best to take these stories with a grain of salt, but there are a lot of them out there.
