Pheonix area off-roading?

Heading out to Apache Junction during the 4th of July weekend. Need to know of some off-road areas that I can visit. Preferably in the mountain areas and near some swim hole.
I am traveling from the San Diego area and have not taken my Jeep to Arizona yet....
Any help?
