Man i have been eating so much turkey and chicken i should do some pork.

think as soon as all these left overs are done i may go get one.




anyone here smoke food with wood and charcoal?
does it get harder to get that perfect temp in the 20*winter?
i did pretty good this past summer(my 1st year smoking) but that was during nice summer days.
 
I tried smoking a turkey with charcoal and apple chips for my first try. I tried to keep it up but with the wind, after about four hours, I put it in the oven for an hour. It still had the smokey flavor. I want a smoker with a side fire box on the side. I have though about a electric smoker also.

ELECTRIC smoker is only way to go. I hated keeping wood and charcol going for hours.

my favorite part is keeping that fire going.

while im eating the meat all i think about is how it was difficult to keep a perfect temp. constant watching the temp adding wood when it starts to cool opening up the lid if its a little to hot. all while i am hanging in the pool, playing bags, drinking beer, chilling with famo. i loved it.

maybe electric will be in the future, if i grow tired of this, but for right now the hard part of making the meat perfect is what i find the funnest

imo...charcoal smokers give the best flavor but are the hardest to maintain. i have one. i've done plenty of stuff in the winter...just takes a little longer.
