98 engine into a 91

It'll work just fine as long as you switch over the sensors. You'll have to drill the head on the 98 so you can put the sensor in that is in the back of the head on the 91. Otherwise, the longblock is the same.
Actually the newer ones have the sensors in the t-stat housing. So you will need to extend the wire to connect it.

The one in the back of the head of the 91 is for the gauge. 98, the one in the t stat housing tells the computer the temp, which in turn makes the gauge work. Still need the one in the head to make the gauge in the 91 work!
 
I put a 99 in my 91, and it was pretty straightforward. Basically keep existing harness and electronics intact, swap the engine out, and plug the old electronics into the new engine. This means sensors, injectors, distributor and coil, all of which have to be the same generation as the computer. CanMan is talking about the temperature gauge sender, and you wont' have a hole for that anymore. The easiest thing to do is get a 1/8 NPT (plumbing) tap and put a hole in the flat spot on the thermostat housing, and then extend the wire. You'll need to keep the 91 fuel rail since it's plumbed differently as well. One other thing is that you will need to use a 96+ power steering pump since the brackets changed and the older pump won't fit right. It's also a good time to do the 99+ intake manifold swap if you can swing it with everything else.
