Convert 2001 D30 to 5x5.5 with JK hubs?

What are you trying to accomplish? The JK is 5 on 5, an 8.8 out of an explorer is still 5 on 4.5, and an 8.8 out of an F-150 or bronco is 5 on 5.5 and wider than the cherokee axles (or explorer 8.8).

I don't like the extra moment that spacers put on wheel bearings. I figured redrilling the back axles to 5x5 would take care of the rear. So, for two new wheel bearing hubs, which I probably need anyway, I'd be done and able to run JK wheels.

Running adapters with stock style rims is no different then running an aftermarket rim with no spacer adapter. I just did it because I wanted to run the WJ rims I like.

I have run many different rims/tires on my jeeps and it barely pushes it out with a factory back space rims. I can get a picture from the front if you want. Tread still completely covered by flare. Just make sure you are tightening them appropriately and some loctite on the inside nuts isn't a bad idea. Originally I was going to try the same thing you are thinking by using maybe wj rear 8.25 shafts but couldn't figure out a way for the front which is why I took the adapter route.
