well I did it this time, put on my extended yj brake lines after having to re-flare a couple of steel lines which went perfectly by the way, and after adding my new synthetic brake fluid and bleeding the system of course I have one nipple that wouldnt budge, now I've chewed it off to a nub. Is the best bet using one of those easy-out screw extractors or what do you all suggest? Please help...

The easyiest thing is to just buy a new caliper or wheel cylinder and replace it. They are not that expensive and labour involved in changing it out is easier than extracting a broken nipple.

You can try cracking line fitting open and try bleeding it there, sometimes it works, sometimes it doesn't.
