Well I dont know if it is normal or not but when im driving and hit the gas..... sometimes is will really get going.... while other times it will pick up but not like other times.... is there something I could do to make it really pick up pretty much all the time? is this all normal?

You might want to think about changing the air intake setup. Ex. rusty's air tube, with an overbored throttle body, and an exually bored out throttle body spacer. That might get you a more consistant throttle response.
