Car stereo questions

The ole lady wants a total stereo reboot on the sc300. So far I put 6.5 speakers(components front/coax rear) all around and new tweeters which wasn't too bad getting them to fit, stock was 4" all around. Now she wants the head unit, amps and sub to finish off the speakers.

I've never done an in depth stereo install like this so I am trying to read up and learn as much as I can before ripping into it. Being that I am going to bypass every bit of the factory wiring should really make this easier I am hoping?

It should be a matter of installing the HU(using a double DIN install bracket), getting the basics to the HU such as power. I won't need a specific harness but instead a universal harness and just splice into the power and other few things? Then, running RCA cables to the amp and then speaker wire to each speaker, also I was recommended to do a separate amp for the sub. I was planning a power junction block on the trunk for the 2 amps and 4 gauge power wire going to the trunk.

I intend to run the power along the driver side, speaker/RCA wires along the passenger side. I want to mount the amp to a board rather than direct to metal.

She is eyeing the AVH-P4300DVD and haven't decided on speaker amp, sub amp or sub yet but likely going to stay with pioneer.

In a nutshell am I thinking along the right lines or not ready for this task yet lol. I am just worried about the wiring, I think being replacing it all I will be much better off. The stock setup uses an odd amp and stuff, I want to ditch that entirely. The only thing the new HU will need is power?
 
Constant power, ign power, remote power (for amp/s). In theory, you could use the splice connectors from behind the factory harness to run the wires to the HU
 
You can get a harness that plugs into the factory wiring that you can draw your 12v constant and switched from. Should be easier than running new wire.
