Oops, forgot to mention that the reason the Sony is easier is because they are L-shaped. IE the part that slides in the dash is single-DIN sized (more or less), but the front is a full height double-din screen. There's less interference with the ducts inside.
I just did the double din install on my '98 and it was super easy with a Sony head unit. Just 1 chunk cut off from the AC work that I did with a little hack saw (dremmel would be easier). Also got a backup camera to install but haven't started work on that.
Ed has a good description. Stock rims are going to help you if you want to keep the stock fenders, because it keeps the tires inside the fenders. Specifically with a 31x10.5. It does have other trouble spots (lower control arms, inner fender, etc), but those aren't too hard to address.
31x10.5 BFG's fit just fine on 2"-ish. A little trimming on the front bumper caps but nothing else. Just a little rub on the inner fenders at full flex. This is with stock wheels, which keep the wheels tucked inside the fender.
If it's really just pavement, just put an all season on it like every other stock vehicle on the road. I doubt any modern tire is going to be the limiting factor for handling on the street.
I had some overheating problems when I got my XJ ('98, 120k). Ended up swapping the radiator for a cheapo autozone stock replacement and fixed it instantly, done well for the last year (30k). YMMV
