Check out VLC Media Player. It has filters built in that can both deinterlace for playback as well as transcode (or just rewrite the original) without interlacing.

I took a shot at doing this once as well. If there's one thing I learned from that process, it's that you want to take the photos before you eat the food, not several hours after. Really helps to keep the readership numbers up.

Mint's nice. I'm running it as my VM distro for when I need a desktop/testbed Linux installtion to run <insert software here>. And it supports the VMWare tools very nicely. It was surprisingly hard to find a lightweight distro that did. Bingo.
