These are really cool, I had always planned to do a similar setup (minus a fan) using window screen but I like this setup a little better mounting wise and that you can mount things to it, except the fact the screen would be a little better to deal with bugs if you're using these for ventilation...
Out of curiosity your mounts look a bit different than the others on the market. Is there a reason you chose to bolt the plate straight to the block as opposed to browndog/ironmanfab using "sleeves" welded to their plates the bolts go through?
This is exactly what I did. There's a reasonable amount of room in there too. However the rough country brackets do make it much easier, or you could fab your own.
Depends on your budget. If I were you I'd go with an old man emu 2" lift front and rear springs, V8 ZJ steering upgrade and then go from there. It'll ride better than stock, steering is beefed up enough for mild trails.
My friend has a newer cherokee and loves it. I'm not a fan of the styling but they drive pretty good and have loads of power if you get the V6 option. I wouldn't recommend a compass/patriot since they have no power and garbage CVT trans. Haven't driven the new Jeep Renegade yet.
Add a leafs work, but not for long. I ran an add a leaf when I first lifted my XJ, after 2 years it had sagged really bad because the stock springs were shot. It's really best just to get a whole leaf pack if possible.
